An eclectic crowd populates this spot in Key Largo. First among the many places to eat along the way is Alabama Jack's. Travelers come to the Florida Keys for the sun, the sand and the scenery of America gone Caribbean. They come for bone-fishing in the morning, margaritas at midday and sunsets. And before it's time to depart, everybody wants a piece of Key lime pie.

What is the history of key lime pie? 

Key Lime Pie was known in the Florida Keys "as far back as the 1850s." It don't doubt it a bit because in those pre-refrigerator days, fresh milk was a poor keeper. What local cooks had learned to rely on was the sweetened condensed milk Gail Borden had begun canning shortly before the Civil War." The recipe developed with the advent of sweetened condensed milk in 1856. Since there were few cows on the Keys, the new canned milk was welcomed by the residents and introduced into a pie made with lime juice. The original pies were made with a pastry crust, but a crust made from graham crackers later became popular and today is a matter of preference, as is the choice between whipped cream and meringue toppings.

KEY LIME PIE RECIPE

Key lime pie gets its true pale yellow color from the egg yolks.

The texture should be a firm custard.Use fresh Key Limes.

i n g r e d i e n t s (crust)
16 graham crackers, crushed
3 tablespoons sugar
1 cube (1/4 lb) margarine or butter

Mix the ingredients and press them into a 9" pie plate. 

 Bake in a preheated 350F oven for 10 - 12 minutes until lightly browned.

Place on a rack to cool.

4 large or extra large egg yolks
1 14 ounce can sweetened condensed milk
1/2 cup fresh key lime juice (approximately 12 Key limes)
2 teaspoons grated lime peel, green portion only
Whipping cream for garnish (optional)

Use an electric mixer and beat the egg yolks until they are thick and turn to a light yellow, don't over mix. Turn the mixer off and add the sweetened condensed milk.  Turn speed to low and mix in half of the lime juice. Once the juice is incorporated add the other half of the juice and the zest, continue to mix until blended (just a few seconds).   Pour the mixture into the pie shell and bake at 350F for 12 minutes to set the yolks and kill any salmonella in the eggs.

If you are using the whipping cream garnish, prepare the cream.  Serve with a dollop of whipped cream.

Jimmy Buffett' Margarita

     1.  Fill shaker with broken cubed ice.
     2.  Squeeze TWO fresh lime wedges into shaker.
     3.  Add 2 oz. Cuervo 1800.
     4.  Add 1/2 oz. of Jose Cuervo White
     5.  Add 1-1/4 oz. of Roses Lime Juice .
     6.  Add 1/2 oz. of Bols Triple Sec
     7.  Add "a splash" of Bols Orange Curaco
     8. Cover shaker tightly!
     9. Shake vigorously.
     10. Rim glass with Lime peel (outside only!). 
     11. Salt the outside only.
     12. Add fresh ice.
     13. Strain mixture over ice.
     14. Squeeze in 1 lime wedge .
     15. You are now in Margaritville, kick back, and enjoy!

A Pirate Looks At Fifty We are indeed the people our parents warned us against! Our generation, the Boomers,  we have been through a lot. They were the best of times.  They were the worst of times. We are now approaching the summer of our  years. Part of that stage of life is reflecting on what we have done and what we will do with tommorrow.  We are growing older, but are younger then that now.

The Yucca Jug!

Take a 1 gallon jar painted in yucca design

Fill it ½ way with ice

Cut 3 lemons and 3 limes in pieces and throw them in the jar

Add 1 cup of sugar

Add 1 full bottle of Jose Cuervo Tequilla.

Wrap the jar with a towel and shake for 15 minutes.

After 15 minutes, fill the jar the rest of the way ice and shake for another 15 minutes.

Open the top and start drinking and pass it around the party.

Wild Yucca...wait until the party starts to get going. As people start getting a buzz on, they will be willing to shake the yucca jug. Also, while shaking,  have people say yucca yucca yucca etc. The call of the yucca.

BLUE CHEESE BUTTER
1/2 c. butter, softened 1/2 c. crumbled blue cheese 1 tsp. Worcestershire sauce Blend ingredients to make 1 cup. Add to the catch of the day.

Fish or scallops -  pan seared in clarified butter for 3 minutes or so until just cooked through. Around them, spinach cooked with shallots until wilted. The sauce, a flavored butter/cream sauce.
