An eclectic crowd populates this spot in Key Largo. First among the many places to eat along the way is Alabama Jack's. It comes up on the right just before the big old bridge along Card Key Sound Road. It's a long-neck beer kind of place right on the water that serves a tasty fish sandwich. Mangrove Mike's: is one of the undisputed greatest places in the keys for morning biscuits and gravy known as the hangover helper, omelets galore and they even have vegetarian dishes. Menu stalwarts include the TJ Dolphin, a mahimahi fillet with a spicy tomato salsa served with black beans and rice. There's also an assortment of burgers, barbecue, and seafood. The chili is always good, and nightly specials are also worth the stop. Can use credit cards. Closed Sun.
We had a list of a half dozen restaurants, so we kept looking for them. Then I spotted Mrs. Mac’s Kitchen and slammed on the brakes. Mrs. Mac’s is exactly the kind of restaurant we are searching for on the trip - a place where the locals eat (and those tourists lucky enough to have heard about it). It has a truck-stop-like appearance on the outside and a wide variety of license plate decor on the inside. Flying Saucers are their specialty - delicious sandwiches in round pita bread pockets. For dessert, we had “frozen” key lime pie, and boy was it good - very refreshing.

Travelers come to the Florida Keys for the sun, the sand and the scenery of America gone Caribbean. They come for bone-fishing in the morning, margaritas at midday and sunsets. And before it's time to depart, everybody wants a piece of Key lime pie.
What is the history of key lime pie?
Key Lime Pie was known in the Florida Keys "as far back as the 1850s." It don't doubt it a bit because in those pre-refrigerator days, fresh milk was a poor keeper. What local cooks had learned to rely on was the sweetened condensed milk Gail Borden had begun canning shortly before the Civil War." The recipe developed with the advent of sweetened condensed milk in 1856. Since there were few cows on the Keys, the new canned milk was welcomed by the residents and introduced into a pie made with lime juice. The original pies were made with a pastry crust, but a crust made from graham crackers later became popular and today is a matter of preference, as is the choice between whipped cream and meringue toppings.
KEY LIME PIE RECIPE
Key lime pie gets its true pale yellow color from the egg yolks.
The texture should be a firm custard.Use fresh Key Limes.
i n g r e d i e n t s (crust)
16 graham crackers, crushed
3 tablespoons sugar
1 cube (1/4 lb) margarine or butter
d i r e c t i o n s (crust)
Mix the ingredients and press them into a 9" pie plate.
Bake in a preheated 350F oven for 10 - 12 minutes until lightly browned.
Place on a rack to cool.

4 large or extra large egg yolks
1 14 ounce can sweetened condensed milk
1/2 cup fresh key lime juice (approximately 12 Key limes)
2 teaspoons grated lime peel, green portion only
Whipping cream for garnish (optional)

Use an electric mixer and beat the egg yolks until they are thick and turn to a light yellow, don't over mix. Turn the mixer off and add the sweetened condensed milk. Turn speed to low and mix in half of the lime juice. Once the juice is incorporated add the other half of the juice and the zest, continue to mix until blended (just a few seconds). Pour the mixture into the pie shell and bake at 350F for 12 minutes to set the yolks and kill any salmonella in the eggs.

If you are using the whipping cream garnish, prepare the cream. Serve with a dollop of whipped cream.

1. Fill shaker with broken cubed ice.
2. Squeeze TWO fresh lime wedges into shaker.
3. Add 2 oz. Cuervo 1800.
4. Add 1/2 oz. of Jose Cuervo White
5. Add 1-1/4 oz. of Roses Lime Juice .
6. Add 1/2 oz. of Bols Triple Sec
7. Add "a splash" of Bols Orange Curaco
8. Cover shaker tightly!
9. Shake vigorously.
10. Rim glass with Lime peel (outside only!).
11. Salt the outside only.
12. Add fresh ice.
13. Strain mixture over ice.
14. Squeeze in 1 lime wedge .
15. You are now in Margaritville, kick back, and enjoy!
